Banana-Date Cookies

Yesterday was a snow day here in Northern Virginia, which offered a perfect opportunity to use up a ripe banana, chop up some dates, and make these delicious banana-date cookies! 

Banana Date Cookie Recipe

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 1/2 sticks unsalted butter, room temperature
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup mashed ripe banana (about 1 large)
  • 1/2 cup old-fashioned rolled oats
  • 4 ounces dates, pitted and chopped

Directions

Preheat oven to 375 degrees F.  Combine flour, salt, and baking soda in a bowl.  Set aside.  Using an electric mixer, mix butter and sugar on medium speed for 3 minutes. Add egg and vanilla; mix until combined.  Stir in banana.  Add flour mixture; mix until just combined.  Stir in oats and dates.

Scoop heaping tablespoons of dough onto baking sheet lined with parchment paper, spacing about 2 inches apart.  Bake cookies, rotating sheet halfway through, until golden brown, about 12 minutes. Transfer cookies to wire rack; cool completely. Cookies can be stored at room temperature for up to 2 days or wrap well and freeze.
